Description

Spyderco Murray Carter Itamae 5″ Petty Super Blue/SUS410 Steel Burl G-10 Plainedge K15GPBNBK

From the French petit meaning “small,” the Petty knife serves as the Japanese counterpart to a Western paring knife—perfect for peeling, slicing fruits and vegetables, making garnishes, and handling all your fine-detail prep work.

Master bladesmith Murray Carter spent nearly twenty years immersed in the traditions and techniques of Japanese knifemaking. As the designated heir to a 420-year-old bladesmithing lineage, he holds the esteemed title of 17th Generation Yoshimoto Bladesmith. He is also a Master Smith in the American Bladesmith Society—widely regarded as one of the foremost authorities on Japanese kitchen cutlery.

Through a remarkable collaboration, Spyderco has translated Carter’s meticulous craftsmanship into a stunning series of production knives: the Murray Carter Collection. Made in Japan to Spyderco’s uncompromising standards, this collection showcases Carter’s refined interpretations of five traditional Japanese kitchen knife patterns, each designed to excel in everyday culinary tasks. These knives are offered across three distinct tiers.

At the top of this hierarchy is the Itamae Series—a name that literally means “in front of the cutting board,” an honorific reserved for elite sushi chefs. True to this heritage, Itamae Series knives feature exceptional materials and painstaking craftsmanship.

Their blades are forged from laminated steel with an Aogami Super Blue core—a premium, ultra-hard carbon steel renowned for its sharpness and longevity—clad between layers of SUS410 stainless steel for added protection and support. Ground extremely thin and perfectly straight, these blades deliver extraordinary cutting performance. Each knife also incorporates Murray Carter’s signature “Carter Elbow”—a unique spine-to-tip taper that reinforces the tip for superior strength and control.

Spyderco

Spyderco was founded in 1976 by Sal and Gail Glesser. In 1981, the Glessers put down roots in Golden, Colorado and introduced the first Spyderco folding knife. That knife pioneered the concept of a round hole in the blade for one-handed opening, a clip on the handle for carry at the top of the pocket, and the option of a serrated edge for aggressive cutting performance. Since then, Spyderco has steadily grown to become one of the leaders in the cutlery industry. In addition to a worldwide distribution network and manufacturing resources in the U.S., Japan, Taiwan, Italy, and China. Those Who Know, Carry Spyderco.
