The Bunka shape is a lighter, thinner, and shorter alternative to the Western-style chef’s knife, combining the versatility of a classic chef’s knife with the precision of a Santoku. Its wide profile and sharply angled Kiritsuke (reverse tanto) tip allow for controlled, precise cutting, making it ideal for slicing, dicing, and detailed prep work.
The blade is made from SG2 micro-carbide powder steel and protected by 101 layers of steel with a striking flower Damascus pattern. CRYODUR ice-hardening locks in long-lasting sharpness, and the hand-honed three-step Honbazuke process delivers a scalpel-like edge. With a thin Japanese blade profile angled between 9.5° and 12, this knife offers exceptional precision and durability.
Complementing the blade is an ergonomic Karelian (Masur) Birch handle, known for its comfort, strength, and aesthetic appeal – its the same wood historically used in Faberge eggs.
