Rooted in Japanese tradition, the Bunka shape is a lighter, thinner, and shorter alternative to the classic Western-style Chef’s Knife, blending the versatility of a chef’s knife with the precision of a Santoku. Its wide, stocky profile and sharply angled Kiritsuke (“reverse tanto”) tip provide added dexterity and control, making it ideal for precision cutting in the kitchen.

The MIYABI Kaizen II collection, handcrafted in Seki, Japan, represents the pinnacle of Japanese knife-making. The FC61 steel core, protected by 48 layers of damascus, is double FRIODUR® ice-hardened for exceptional durability, corrosion resistance, and cutting-edge retention. Each blade is hand-honed using the traditional three-step Honbazuke process, achieving an impressively sharp 9.5°–12° edge angle. The dramatic darkened flower Damascus finish adds both beauty and function, reducing food adhesion while highlighting the craftsmanship.
