Miyabi Kaizen II 5000FCD 8″ Chef FC61 Flower Damascus Black Pakkawood
The MIYABI Kaizen II 8-Inch Chef’s Knife represents the next evolution of precision and performance. Meaning “improvement” in Japanese, Kaizen II captures MIYABI’s relentless pursuit of perfection. Handcrafted in Seki, Japan, a city world-renowned for fine blade-making, this all-purpose chef’s knife combines traditional Japanese artistry with modern steel technology to deliver a tool of unmatched sharpness, control, and beauty.
Forged with a resilient FC61 fine carbide steel core, the blade is clad in 48 layers of stainless steel, creating a distinctive dark flower-pattern Damascus finish achieved through acid dipping. The double FRIODUR® ice-hardening process enhances corrosion resistance, edge retention, and toughness. Each blade is hand-honed using the four-step Honbazuke method, achieving a razor-sharp 9.5° to 12° edge that glides effortlessly through any ingredient.
The elegant, ergonomic black pakkawood handle features a traditional Japanese D-shape for comfort and balance. Finished with a mosaic pin and MIYABI logo end cap, the handle offers secure, fatigue-free grip and refined craftsmanship that perfectly complements the artistry of the blade.
