The Shun Premier 6″ Boning & Fillet Knife is engineered for precision meat and fish preparation. Its narrow, curved blade excels at two essential kitchen tasks: boning and filleting. When boning, the slim, sharp curve allows you to get close to bones for fast, clean separation, while trimming silver skin or creating cutlets becomes effortless. For filleting, the 6-inch blade glides smoothly along fish, quickly removing bones and skin with minimal effort. The combination of the blade design and the contoured Premier handle ensures a secure grip and excellent control throughout every cut.

The blade features Shun’s VG-MAX cutting core, the latest in the VG series of “super steels,” offering exceptional edge retention, wear resistance, and corrosion resistance. It is surrounded by 68 micro-layers of Damascus cladding, which enhance durability, reduce food sticking, and create a striking visual pattern. The hammered tsuchime finish further helps food release from the blade.
