Description

Spyderco Murray Carter Itamae Gyuto, Super Blue/SUS410 Steel, G-10 Plainedge K15GPBNBK

Based on the meticulously handcrafted custom knives of master bladesmith Murray Carter, Spyderco’s Murray Carter® Collection showcases five traditional Japanese kitchen knife patterns in three different series. Literally translated as “cow blade,” the Gyuto is the largest knife of the group. The Japanese equivalent of a Western chef’s knife, its versatile design is suitable for slicing, carving, chopping, and detailed food preparation chores.

The most refined expression of this pattern is the Itamae™ Series Gyuto. Literally meaning “in front of the cutting board,” Itamae (pronounced ee-tah-my) is an extremely prestigious title reserved for highly skilled sushi chefs. Knives in this tier of the collection are expertly crafted from laminated steel consisting of an Aogami Super Blue core clad between layers of SUS410 stainless steel. This classic three-layer construction allows the outer layers to protect and support the ultra-hard carbon-steel center layer that forms the blade’s edge. Ground exceptionally thin for unparalleled cutting performance, the blades of the Itamae Series are paired with traditional wa-style (octagonal) handles made from stunning burl G-10 and highlighted with black G-10 ferrules.

Spyderco

Spyderco was founded in 1976 by Sal and Gail Glesser. In 1981, the Glessers put down roots in Golden, Colorado and introduced the first Spyderco folding knife. That knife pioneered the concept of a round hole in the blade for one-handed opening, a clip on the handle for carry at the top of the pocket, and the option of a serrated edge for aggressive cutting performance. Since then, Spyderco has steadily grown to become one of the leaders in the cutlery industry. In addition to a worldwide distribution network and manufacturing resources in the U.S., Japan, Taiwan, Italy, and China. Those Who Know, Carry Spyderco.
